  • 8 oz Black Penne or black rice penne for gluten-free
  • 1 cup Dark Red Cherry Tomatoes sliced in half
  • 1 cup Fresh Basil only fresh leaves
  • 1 cup Carrots mix purple, orange, and white
  • 8 oz Mozzarella Pearls or burrata or feta for variation
For the Dressing
  • 3 tbsp Balsamic Vinegar or red wine vinegar as an alternative
  • 4 tbsp Extra Virgin Olive Oil use fresh for best flavor
  • 1 tbsp Mustard
  • to taste Coarse Salt
  • to taste Black Pepper

Method
 

Preparation Steps
  1. Step 1: Boil salted water, cook black penne for 10 minutes, drain, and cool.
  2. Step 2: Slice the dark red cherry tomatoes in half and slice the colorful carrots.
  3. Step 3: In a bowl, whisk together balsamic vinegar, olive oil, mustard, salt, and pepper until emulsified.
  4. Step 4: Toss cooled black penne with cherry tomatoes and carrots; drizzle with dressing.
  5. Step 5: Gently fold in mozzarella pearls and fresh basil, taking care not to break the pearls.
  6. Step 6: Optional: Garnish with pumpkin seeds before serving.
