Method
 

Preparation for Strawberry Sunrise Mimosa
  1. Wash, hull, and chop 2 cups of fresh strawberries. In a medium saucepan, combine the strawberries with 1 cup of water and 1 cup of sugar. Bring to a gentle boil over medium heat, then reduce to a simmer for 10-15 minutes.
  2. Remove the strawberry mixture from heat and allow it to cool for about 10 minutes. Strain the syrup into a clean jar using a fine mesh sieve.
  3. To assemble the Mimosas, pour 2 oz of orange juice into a wine glass, followed by 3 oz of chilled Prosecco and ¾ oz of strawberry syrup. Gently stir to combine.
  4. For garnish, take a fresh strawberry and slice it slightly to create a notch. Place it on the rim of the glass. Serve immediately.
