Cooking Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Coat each chicken breast generously with mayonnaise, then dredge in crushed kettle-cooked potato chips. Place on baking sheet and bake for 15-17 minutes until cooked through and golden.
  3. Preheat your waffle iron according to the manufacturer’s instructions.
  4. Beat egg whites until soft peaks form. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Combine with melted butter and buttermilk, then fold in beaten egg whites.
  5. Pour the batter into the hot waffle iron and cook according to guidelines until golden brown and crispy, approximately 5 minutes.
  6. In a medium pan, melt butter over medium heat. Whisk in flour, cooking for 1-2 minutes until lightly golden. Gradually add milk, stirring until gravy thickens, about 5 minutes.
