- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Coat each chicken breast generously with mayonnaise, then dredge in crushed kettle-cooked potato chips. Place on baking sheet and bake for 15-17 minutes until cooked through and golden.
- Preheat your waffle iron according to the manufacturer’s instructions.
- Beat egg whites until soft peaks form. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt. Combine with melted butter and buttermilk, then fold in beaten egg whites.
- Pour the batter into the hot waffle iron and cook according to guidelines until golden brown and crispy, approximately 5 minutes.
- In a medium pan, melt butter over medium heat. Whisk in flour, cooking for 1-2 minutes until lightly golden. Gradually add milk, stirring until gravy thickens, about 5 minutes.
- To serve, place a warm waffle on each plate, top with crispy oven-fried chicken, and drizzle with creamy white pepper gravy. Optionally sprinkle with scallions.
