  • 1 cup Canned Black Beans drained and rinsed
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Chili Powder optional
  • 1 cup Shredded Cheese (Cheddar/Monterey Jack) your favorite for melting
  • 1 tablespoon Fresh Cilantro for garnish
For Serving
  • 1 medium Avocado/Guacamole optional
  • 1 cup Salsa/Pico de Gallo
  • 1 medium Lime Wedges optional
  • 1 cup Sour Cream/Greek Yogurt optional but recommended
  • 2 slices Warm Tortillas/Toast for serving

Method
 

Step-by-Step Instructions
  1. Finely chop onions, red and green bell peppers, and tomatoes. Rinse black beans, and prepare sausage if using.
  2. Heat oil in a skillet over medium heat. Sauté onions for 2 minutes until translucent, then add bell peppers and cook another 2 minutes.
  3. Add tomatoes, black beans, sausage, and spices, cooking for another 3-4 minutes.
  4. Crack eggs in a bowl, add milk (optional), whisk with salt and pepper until frothy.
  5. In the same skillet, add butter or oil and heat. Pour in egg mixture, cooking for 1-2 minutes until edges set.
  6. Add filling to one side, top with cheese, fold the omelette and cook for another 1-2 minutes.
  7. Slide onto a plate, garnish with cilantro, avocado, and salsa. Serve with lime wedges.
