- In a large skillet, heat over medium heat, then add ground beef. Cook for 7-10 minutes until browned and no longer pink. Drain excess fat, season with salt and pepper, and set aside.
- In a medium bowl, combine mayonnaise, ketchup, mustard, and sweet pickle relish. Mix until smooth and well combined.
- Lay a large flour tortilla flat. Spread a tablespoon of the special sauce, then layer on the ground beef, lettuce, cheddar cheese, onions, and pickles.
- Fold in the sides of the tortilla, then roll it tightly from the bottom to the top to secure it. Optionally wrap in parchment or foil.
- Slice each wrap in half at a slight diagonal with a sharp knife and serve with your favorite sides.
