- Reduce heat to low and add sour cream, stirring gently. Season with salt and pepper.
- Return seared beef to the skillet, stirring to combine, and heat through for 2-3 minutes.
- Serve cooked egg noodles topped with the beef stroganoff mixture and garnish with fresh parsley if desired.
