Preparation Steps
- Preheat your oven to 375°F (190°C).
- Slice the eggplants into ¼-inch rounds and sprinkle salt over each slice. Let sit for 10-15 minutes, then pat dry.
- Brush both sides of the eggplant slices with olive oil and roast in the oven for 15-20 minutes.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, egg, fresh basil, garlic powder, oregano, salt, and pepper. Stir until creamy.
- Spoon the cheese mixture onto one end of a roasted eggplant slice and roll tightly. Arrange seam-side down in a baking dish.
- Pour marinara sauce over the rollups, then bake for 20-25 minutes until cheese is melted and bubbly.
- Remove and let cool for a few minutes. Serve warm garnished with fresh basil.
