Ingredients
  

For the Eggplant Rolls
  • 3 medium Eggplants Choose firm, smooth ones for best results.
  • 15 oz Ricotta Cheese Substitute with cream cheese or goat cheese for a different flavor.
  • 8 oz Mozzarella Cheese Use fresh mozzarella for a richer taste.
  • 1/2 cup Grated Parmesan Cheese Sprinkle in for a tangy depth.
  • 1 large Egg A flax egg is a great vegan substitute.
For the Seasoning
  • 1 cup Fresh Basil Dried basil can work in a pinch.
  • 1 tsp Garlic Powder Fresh minced garlic can also be used.
  • 1 tsp Dried Oregano
  • to taste Salt & Pepper Adjust to taste.
For the Topping
  • 2 tbsp Olive Oil For brushing eggplant slices.
  • 1 cup Marinara Sauce Optional; can swap with pesto.

Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. Slice the eggplants into ¼-inch rounds and sprinkle salt over each slice. Let sit for 10-15 minutes, then pat dry.
  3. Brush both sides of the eggplant slices with olive oil and roast in the oven for 15-20 minutes.
  4. In a mixing bowl, combine ricotta, mozzarella, Parmesan, egg, fresh basil, garlic powder, oregano, salt, and pepper. Stir until creamy.
  5. Spoon the cheese mixture onto one end of a roasted eggplant slice and roll tightly. Arrange seam-side down in a baking dish.
  6. Pour marinara sauce over the rollups, then bake for 20-25 minutes until cheese is melted and bubbly.
  7. Remove and let cool for a few minutes. Serve warm garnished with fresh basil.
