Ingredients
  

For the Pasta
  • 200 g Rotini or fusilli pasta Can use gluten-free pasta.
For the Eyeballs
  • 150 g Mini mozzarella balls Mozzarella pearls are a great alternative.
  • 1 unit Black olives Sliced into rounds.
For the Veggies
  • 150 g Cherry tomatoes Grape tomatoes can be used as a substitute.
  • 1 unit Cucumber Diced.
  • 1 unit Red bell pepper
  • 1 unit Yellow bell pepper
  • 50 g Black olives Sliced.
  • 50 g Green olives
  • 20 g Fresh basil leaves Chopped.
For the Dressing
  • 3 tbsp Olive oil Avocado oil is a lovely alternative.
  • 2 tbsp Balsamic vinegar Red wine vinegar works well too.
  • 1 tsp Italian seasoning Can use individual herbs.
  • Salt and pepper To taste.

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a rolling boil. Add pasta and cook for 8-10 minutes until al dente. Drain and rinse under cold water.
  2. Prepare mozzarella eyeballs by placing mozzarella balls on a cutting board and securing olive slices on each for pupils.
  3. In a large bowl, combine cooled pasta with cucumbers, bell peppers, tomatoes, and black olives, and gently mix.
  4. Whisk together olive oil, balsamic vinegar, and Italian seasoning in a small bowl. Add salt and pepper to taste. Drizzle over the salad and toss.
  5. Place mozzarella eyeballs on top of the salad and sprinkle with fresh basil leaves.
  6. Cover and refrigerate for at least 30 minutes before serving.
