- Combine softened cream cheese, tomato sauce, chicken stock, half of the fajita spice mix, and a pinch of salt and pepper in a bowl and mix until smooth.
- Cut chicken into bite-sized pieces, place in the baking dish, and sprinkle with remaining fajita seasoning, mixing to coat.
- Pour the creamy mixture over the chicken, then layer with bell peppers and onions, topped with shredded cheese.
