  • 8 ounces Cream cheese softened
  • 1 cup Tomato sauce
  • 1/2 cup Chicken stock low-sodium
  • 2 tablespoons Fajita spice mix
  • 2 cups Bell peppers any color, sliced
  • 1 cup Onions sliced
  • 1 cup Shredded cheese such as Mexicana or Monterey Jack
For Serving
  • 2 cups Cauliflower rice for a low-carb base
  • 1 whole Avocado sliced
  • 1/2 cup Sour cream for serving

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly oil a baking dish.
  2. Combine softened cream cheese, tomato sauce, chicken stock, half of the fajita spice mix, and a pinch of salt and pepper in a bowl and mix until smooth.
  3. Cut chicken into bite-sized pieces, place in the baking dish, and sprinkle with remaining fajita seasoning, mixing to coat.
  4. Pour the creamy mixture over the chicken, then layer with bell peppers and onions, topped with shredded cheese.
  5. Bake for 15-25 minutes until the chicken is cooked through and cheese is bubbly; broil for an additional 2 minutes if desired.
  6. Let it rest for a few minutes, serve warm over cauliflower rice and with avocado and sour cream.
