Method
 

Step-by-Step Instructions
  1. Cook the Pasta: Bring salted water to a boil, add pasta, cook until al dente (8-10 minutes), reserve 1 cup pasta water, then drain.
  2. Sauté Aromatics: In a skillet, heat olive oil, add onion and sauté for 3-4 minutes until translucent. Add garlic and bell pepper, cook for 2-3 minutes.
  3. Cook the Shrimp: Increase heat to medium-high, add shrimp and jerk seasoning, sauté for 3-4 minutes until pink and opaque.
  4. Make the Sauce: Pour in the coconut milk and lime juice, simmer for 3-5 minutes, adjust thickness with reserved pasta water.
  5. Combine Ingredients: Stir the drained pasta into the sauce, season with salt and pepper to taste.
  6. Serve: Garnish with cilantro and lime wedges, serve hot.
