Ingredients
  

For the Potatoes
  • 4 medium Russet Potatoes Sweet potatoes can be used for a twist.
  • 2 tablespoons Olive Oil Any cooking oil will work.
  • to taste Salt
  • to taste Pepper
For the Filling
  • 1 pound Ground Beef Substitute with black beans or lentils for vegetarian.
  • 1 packet Taco Seasoning Homemade blend recommended.
For Toppings
  • 1 cup Shredded Cheddar Cheese Monterey Jack can be mixed in.
  • 1 cup Sour Cream Greek yogurt can be a healthier swap.
  • 1/4 cup Chopped Green Onions Can be omitted if needed.
  • 1 cup Diced Tomatoes Fresh tomatoes work well.
  • 1/2 cup Sliced Black Olives Skip if olives aren’t your favorite.
  • 1/4 cup Chopped Cilantro Parsley is an excellent substitute.

Method
 

Preparation and Baking
  1. Preheat your oven to 400°F (200°C).
  2. Scrub the russet potatoes, pat dry, pierce with a fork, and rub with olive oil, salt, and pepper.
  3. Bake the potatoes for 45-60 minutes until tender.
  4. Cook ground beef in a skillet, drain excess fat, and mix in taco seasoning. Simmer for 5 minutes.
  5. Slice baked potatoes lengthwise, fluff the insides with a fork.
  6. Fill potatoes with the beef mixture and top with cheddar cheese.
  7. Bake filled potatoes for an additional 10-15 minutes until cheese is melted.
  8. Add toppings and serve warm.
