- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add 1 pound of ground beef and cook until browned, about 5-7 minutes.
- Stir in 1 chopped onion and 2 minced garlic cloves and cook for an additional 3-4 minutes until the onion is translucent.
- Add 4 cups of diced potatoes, 1 teaspoon salt, 0.5 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon dried oregano. Mix well and cook for 1-2 minutes.
- Pour 2 cups of beef broth into the skillet, cover, reduce heat to low, and simmer for 20-25 minutes until potatoes are fork-tender.
- Remove lid and sprinkle 1.5 cups of shredded cheddar cheese on top. Cover again and cook for 2-3 minutes until cheese melts.
