  • 2 cloves Garlic minced; fresh garlic is ideal
  • 4 cups Potatoes diced; Russet or Yukon Gold
  • 1 teaspoon Salt adjust to preference
  • 0.5 teaspoon Black Pepper fresh ground recommended
  • 1 teaspoon Paprika or chili powder for more spice
  • 1 teaspoon Dried Oregano fresh oregano elevates the flavor
  • 1.5 cups Shredded Cheddar Cheese substitute with mozzarella or Monterey Jack
  • 2 cups Beef Broth chicken or vegetable broth works too
  • 0.25 cup Fresh Parsley for garnish

Step-by-Step Instructions
  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add 1 pound of ground beef and cook until browned, about 5-7 minutes.
  2. Stir in 1 chopped onion and 2 minced garlic cloves and cook for an additional 3-4 minutes until the onion is translucent.
  3. Add 4 cups of diced potatoes, 1 teaspoon salt, 0.5 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon dried oregano. Mix well and cook for 1-2 minutes.
  4. Pour 2 cups of beef broth into the skillet, cover, reduce heat to low, and simmer for 20-25 minutes until potatoes are fork-tender.
  5. Remove lid and sprinkle 1.5 cups of shredded cheddar cheese on top. Cover again and cook for 2-3 minutes until cheese melts.
  6. Sprinkle with fresh parsley before serving. Scoop portions onto plates and enjoy!
