Step-by-Step Instructions
- In a large bowl, combine all-purpose flour, sugar, and table salt. Cut in very cold unsalted butter until mixture resembles pea-sized crumbs. Gradually add very cold water, mixing until dough just comes together. Chill in refrigerator for at least 2 hours.
- Peel, core, and chop 3.5 to 4 lbs of apples. Toss with lemon juice, sugar, cornstarch, and spices. Set aside to meld flavors while dough chills.
- Preheat oven to 375°F. Roll out two-thirds of dough into a rectangle to fit baking sheet. Lay in greased baking pan, fill with apple mixture, and drape remaining dough over filling. Seal edges and cut slits for steam.
- Brush top crust with heavy cream or egg wash. Bake for 40-45 minutes, or until crust is golden brown and filling is bubbly.
- Let the pie cool for at least 45 minutes before slicing, and serve with vanilla ice cream if desired.

Notes
When making the pie, manage chill times carefully to ensure a flaky crust. Experiment with different apple varieties for best flavor.
