Step-by-Step Instructions
  1. In a large bowl, combine all-purpose flour, sugar, and table salt. Cut in very cold unsalted butter until mixture resembles pea-sized crumbs. Gradually add very cold water, mixing until dough just comes together. Chill in refrigerator for at least 2 hours.
  2. Peel, core, and chop 3.5 to 4 lbs of apples. Toss with lemon juice, sugar, cornstarch, and spices. Set aside to meld flavors while dough chills.
  3. Preheat oven to 375°F. Roll out two-thirds of dough into a rectangle to fit baking sheet. Lay in greased baking pan, fill with apple mixture, and drape remaining dough over filling. Seal edges and cut slits for steam.
  4. Brush top crust with heavy cream or egg wash. Bake for 40-45 minutes, or until crust is golden brown and filling is bubbly.
