  3. Drizzle olive oil over the chicken thighs and sprinkle the spice mix generously over them, pressing it into the meat.
  4. Arrange the chicken thighs skin-side up on the prepared baking sheet.
  5. Bake for 35–40 minutes or until the internal temperature reaches 165°F (74°C).
  6. Remove from the oven and let the chicken thighs rest for about 5 minutes before serving.
